Here's my two. These songs had a huge influence on my taste in music.

I was born in 1992, so the following two songs aren't really that old for most of you guys, but to me, they're part of my childhood.
When I first heard this song in Mario 64, I thought it was so great and so cool that I would get the 'metal mario' power-up over and over again just to hear it:
When I discovered this song in F-Zero GX, I would leave the game on Octoman's bio screen for like half an hour just 'cuz I loved this song so much:
Listening to them now, I have no idea why I liked these songs that much. They aren't even the best songs in those two games, but for some reason, I just loved them as a kid!

Here's mine, a bit more PC oriented since I never own a console in my life till my DS (yeah I don't run korg ds10 in a emulator).
Doom, e1m3, atmospheric tune not a copy of a metal band of the 90's (that was John Romero's idea ...)
Dune, one of the best adlib music ever. This is the first tune of the video.
I can't find a video for the title tune of Shadow Of the Comet, disk version (the cd-rom version is crappy) but it worths it.

Some very cool examples above. I have to agree with D A Payne about R-Type and Marble Madness. Really love the Marble Madness. I also loved the music from an arcade game called Reactor. Check it out on MAME if you can. Here is a you tube video but it doesn't really do it justice- poor sound and in mono. The cabinet had stereo speakers which was pretty rare - although I think Marble Madness did as well. I used to just stand there and listen to it's attract mode.

I still have the soundtracks to most of the R-Type games. Super R-Type on the SNES was the best one. 16 bit shmups in general had the best soundtracks. Remember Gradius 3? Good stuff there too.
Hyperzone was another one that was just amazing. A very consistent soundtrack that explored some amazing styles. Definitely one of those sleeper hits that was a great game in its own right but the soundtrack was just like, wow, someone really blew this out of the park.

Sure enough, when I looked it up on wikipedia, it's the same composer as the Kirby games, Jun Ishikawa!
That guy is such an amazing composer.
